Kue Sus a.k.a Choux Pastry

My sister is a very diligent in making any kind of food. Since I arrive here (qatar) she show and ask me to help her making foods. Last week we make the dessert. And it was "Choux Pastry"a.k.a "kue sus"(bahasa Indonesia).


So Let see how do i make them (with my sista recipe).. :)

Ingredients:


For the Pastry:
- 225cc water
- 100gr butter (blue band)
- 1/4 tsp salt
- 125gr high protein flour (tepung cakra)
- 4 eggs medium size


For the Fillings:
- 700cc Fresh Milk
- 125gr sugar
- 90gr Maizena
- 2 egg yolk
- 2 spoon butter


How to make? Here It is:
For the  pastry.
- Boiled the water together with butter and salt
- add all of high protein flour, mix it in a quick movement until it mixed thoroughly. then cool it down (no more steam)
- add all eggs and mix it with mixer.
- Put the dough onto plastic/pastry bag and shape the pastry as we like
-put it in the oven with 200 degree C for about 25-30 minute till it change colour.


For the Filling
- melt the maizena with 200cc milk and add egg yolk, stir. (put aside first)
- boil 500cc milk with sugar 
-  mix the maizena liquid (first step) with the milk (second step) and stir it well until it become coagulate
- add butter, and cool it down..


After that, insert the filling into the pastry.


Tips:
-should add the flour altogether.
-do not open the oven while baking.
